The Ingredients
Makes up to 6 drinks (buy organic/local where you can)
1 pineapple*
2 lemons
rose water (found in the baking section of most grocery stores)
honey
Gin - my favorites: Koval, Prairie Organic, & Bully Boy.
Sparkling Rose - my favorites: Meinklang, Tarantas, & Biokult.
*A note on picking pineapples - If your pineapple is under ripe it will be sour. Avoid pineapples that smell fermented. A sweet scent is generally considered the most important aspect of choosing a ripe pineapple. If it has no scent, it's not ripe.






Pineapple Juice
Makes 1 cup
Cut your pineapple into chunks, and put 2 cups inside a blender.
Now you can blend it as is, or add some sugar to sweeten (depending on the sweetness of your pineapple).
Add water depending on the thickness you want to achieve and blend until smooth.
Strain and enjoy! Keeps for 1-2 days in the refrigerator.
Honey Rose Syrup
Makes 1 cup
1/2 cup honey
1/2 cup water
1 teaspoon rosewater (or 1/2 cup dried rose petals)
Directions
Combine honey and water in a small saucepan.
Bring to medium heat until honey is dissolved.
Remove from heat and add rosewater (or dried rose and let steep).
Set aside to cool. Strain into an airtight container and store in fridge for up to two weeks.
Cocktail Recipe
Makes 1 drink
2 oz pineapple juice
1/2 lemon juice
1/2 honey rose simple
2 oz gin - my favorites: Koval, Prairie Organic, & Bully Boy.
2 oz sparkling rosé - my favorites: Meinklang, Tarantas, & Biokult
Directions
Prep your pineapple juice & honey rose syrup (recipes above).
Then juice your lemons by hand or with a citrus juicer (you should get about 2 oz of juice per lemon).
In a pint class with ice combine pineapple juice, lemon, gin, and the rose honey syrup.
Stir with a long spoon or shake thoroughly with a cocktail shaker. Then strain over ice into your favorite glass.
Finish with sparkling rosé and garnish with a lemon wheel or pineapple slice. Enjoy!
